Also, is there a difference between ExGFX for sprites, and just sprites?

The exact same way you insert any other ExGFX.
Insert the ExGFX file into the ROM, and then use the Purple Poison Mushroom button to load it into SP1, SP2, SP3, or SP4.

Hint: Try hitting F1 next time.
