Personally, I don't like Blind Guardian that much, and haven't heard much of them ... same with Rhapsody.
For Symphony X, the 2 albums that I've heard and which I both like are "The Odyssey" and "V". (V's their newest one, it's more symphonic than The Odyssey).
If you like these kinds of bands, I'd highly suggest Stratovarius also, I'll upload a very good song of theirs here soon and put it up for download for you good folks.

Symphony X- I'd go with V: The New Mythology Suite myself.
