The only thing that I have any access to anyways on how it works would be the GBS specifications from Zophar that are old (it's in the links at the top; I can't direct link). Being a n00b, that doesn't look too fun.

I'd be quite interested in making a few, if I had any idea how the format worked.

My original thoughts were that it was a) too hard to rip or b) it just wasn't interesting enough to rip.

I dunno, maybe this is wrong, but it seems to come off to me as such.
Well, last I checked, the place had about 90% of the rips done by a single person which leads me to believe that there weren't that many people who knew about the specs of the format and how to rip them. I myself tried looking at the document and I couldn't make anything out of it, besides where to put basic information (and that's fairly useless)

That, and it uses z80 ASM, I believe, and I assume most people know 6502 since the GB games aren't hacked nearly as much.

I think the SID / NSF approach in the GBS is the simpler way, 'cause there is no Instrument-Tables because everything (execpt for digital samples, rarely used) is generated by the chip.

And yeah, I'm waiting for new releases too, like Donkey Kong GB / Donkey Kong '94.

Is the GBS format not being worked on anymore (i.e. Is anyone ripping things from GB ROMs anymore for that sole purpose)? The files that I've found on Zophar have been out of date by about two and a half years and I fail to see how it could've died off that fast with what could've been a...well...really good addition to my media library.
I was under the impression that it was waiting for someone to break through with something really good. I guess that never happened. Then again, I'm still waiting on the new GYM format that was supposed to be out last year too.

Now I would do it myself but uhm...I'm not quite skilled in that area, hence why I'm asking it now, given I don't know anything / don't have any specification / too lazy. Pick and choose.

Indeed, I know the feeling.

Is anyone still working on these? Or am I looking at a lost cause? I mean I could easily load a ROM and log the sound output but I figured that maybe I'd find a better way by asking here.

To my knowledge, no. But then again, I don't go everywhere trying to find out everything. Someone could be, and I more than likely won't know about it.
