I prefer to use Mupen64++. I've always liked the Mupen64* emulators, which run perfectly on a netbook with 1GB of RAM on XP, and have decent graphics and sound output.
Don't forget that it can use plugins (there aren't many and there isn't a cheat one yet that works, but blarg), too. AND it's portable to many systems. The emulator list comes from emulator-zone.com as I don't know too many emulators myself... enjoy emulator talk for N64!! Note: polls are not working.
