Well, yeah. You can indeed raise the apparent number of colors per sprite by overlaying. Just check out the faces of Mega Man and the Robot Masters, but that does bring you closer to the sprite limit.
If you don't care about the sprite limit, you'd have about 12 colors to choose from. That's the ultimate limit for a single NES sprite. Speedremix is pushing it. Note that I made a mistake and forgot to include the sprite bank.
