The Unarchiver ( http://wakaba.c3.cx/s/apps/unarchiver.html )
is a utility for unarchiving a lot of files, better than Stuffit Expander (handles most everything you need, except for some password protected .sit files)

Mac OS has uTorrent, now. Whee.

Also:
iTerm, to replace the existing terminal which sucks.
MacPorts, I haven't had much luck but it could just be because of Snow Leopard.
MacIrssi is OK, but command line irssi is great, too.

That's about all I can think of as far as like, Mac OS stuff that hasn't been mentioned. I only just had one for a little while.
