What about Mario and Luigi: Superstar Saga?
It was a funny and it had a nice curve. Also your not just hitting A A A all the way through the battles you have actively dodge/attack. It was one of the few RPG's that I did not feel the need to cheat at any time.

Mischief Makers was one of my most played games for N64, just because 2D + Funny = Win.

Kirby64 while not the hardest game ever, was also one of the most fun. <(^_^)>

To finish it off... Paper Mario. So good words can't describe it. Humor is always good in games.
