NES-wise, here's the best you're getting.

Dragoon X Omega I and II both have custom music. Their NSFs are flaoting around somewhere.

Megaman Ultra, a hack of Megaman 2. I completly redid the music engine, *except the wily castle song, I just brought the tone down a few*

I don't know how to create .nsf files, but if you want to download the .ips here of my hack, you more than welcome to rip the music

My latest hack has a complely new soundtrack, but it's not released yet, give it about 1-2 months I'd say.

I'm a little over halfway done with the soundtrack for Castlevania: Chorus of Mysteries. An unupdated ips of the soundtrack is available in the topic for that game's progress. I'll likely finish the soundtrack by the end of the month.

Edit: that nsf is a simple hack of Castlevania's nsf. I just copied the info from the rom into the nsf (though when I'm actually creating the music, it's the other way around). I don't exactly know how to make my own nsf soundtrack from scratch.

I've not even started on it yet. But I have everything ready; it's more of I need the time to get done with my other 39049023490832 hacks and be able to set down, convert the notes, and listen to beautiful music~

Yes sir you are very accurate. I am very piano based, and also have little idea about drums and rhythms in general. I was planning on omitting them completely from the soundtrack. If you'd like to help out that's be great.

Okay, from which you guess from my nickname, I'm a composer so this thread really interests me.
Which games (NES,SNES,whatever..) are possible to edit music on and how do you do it??

EDIT: Forgot to read the document at the top, which makes it quite clear that editing nsf is not very easy.
