As far as introduction documents go, gbaguy wrote a pretty decent set of tutorials, however his site seems to have disappeared - if you're lucky, someone might have a copy. Otherwise, http://gbadev.org is always a good place to start.

However, I haven't really found a need for those sorts of tutorials - Martin's GBATEK has all the info you'll need on the ARM7TDMI.

interdpth: This was the link I lost and was looking for. I honestly don't think you'd need anything else. It's like a very condensed version of all the pdfs I've read on the matter, just with all the info in one place. This is the kind of thing you might as well download.
