I found this video of a Twilight Princess press conference of some sort and decided to write down the dialogue, it turned out that it contained a few interesting facts that at least I didn't know of before. Those facts could be considered spoilers though, so you've been warned.

(A) - A-button icon
(B) - B-button icon
(L) - L-button icon
(T) - Control stick icon
(up) - Up arrow

This indicates a choice of answers, the asterisk shows what answer the player chose:
-Yes- *
-No-

Here's the entire dialogue:

--The Farm--

Man:
All...righty! Well, why don't we call it a
day and finish up early?
---
You go use some of that horse grass
there and call Epona, like
always, huh?

Link picks a weed that is growing next to them and uses it as a whistle to call Epona.

Man:
Well, are you about ready to round up
them goats and get 'em back in the
barn?
---
What do you say, Link?
-I'll do it.- *
-Sorry...-
---
Great! Then hop onto
Epona!

Man:
Looks like you're ready.
---
All righty! Now you chase them goats
and herd 'em into the barn! And be
quick about it, now!

Link rides around and herds 17 out of 20 goats into the barn, he then approaches the man again and speaks to him.

Man:
Huh? What's the matter,
Link? You gonna quit?
-Yes- *
-No-
---
It's not like you to quit in the middle
of a job...
---
But I s'pose you do have an
important errand today. I guess it
can't be helped.
---
No problem. I'll do the rest. You can
head back to town early so you can
meet with the mayor.
---
...Oh! But before you do, why don't
you show me a little something!
---
A little gate-jumping with
Epona!
---
I know Ilia made you quit...but the
sun don't rise and set over the
mayor's daughter, y'know.
---
Besides, don't worry at all about
it. If you don't tell her, she won't
ever know!
---
You just wait here a second. I'll get
things ready, all righty?

Man:
Come on, now! See if you can break
your old record!
---
Today I want you to jump this fence
in front here and that gate in back...
Y'know, one after the other!
---
If you don't speed up with (A) with
just the right timing, you may injure
the horse, so be careful, all righty?

Link jumps over the fence, then over the gate and that's where the scene ends.


--Toaru Village--

Link is no longer on Epona, this indicates that something will happen in between this scene and where we left off at the farm. He walks up to speak to a man with a funny moustache, I'm guessing he's the mayor.

Mayor:
Now this is a problem...
---
I was planning on having you offer
our gift to Hyrule's royal family as
well...
---
But without Epona, you can't possibly deliver it...

Unknown voice:
Hey! Link!
STAMPEDIN' GOAT!
---
STOP IT!

A goat comes running, Link tries to stop it but fails.

Mayor:
What's the matter, Link?
You normally don't have a problem
pressing (A) to grab a goat and
wrestle it down...
---
I guess there's not much choice...
I'll just have to deduct the value of
the goat you let by from this month's
salary.
---
You may think it harsh, but you're an
adult now, so you've got to do your
job well or pay the piper.
---
Fado, who let 'em out of the barn,
always says that a real adult
accepts responsibility for mistakes
on the job...
---
But enough about all that. Can't you
go find Ilia and try to get
Epona back?

Link runs along towards a stream of water, he sees a cradle floating by. A pregnant woman comes running, Link walks up to her to speak.

Woman:
Oh... This is just awful...
---
Say, Link...
---
You didn't see a cradle go floating
by, did you?
---
I wove it out of fine tree bark.
It's for my baby, obviously...
---
Oh, what am I going to do?
---
How far downstream could it have
gone?

Link ignores the woman's troubles and runs along, he comes up to a house where a funny looking man is standing. Link walks up to talk to him.

Man:
...Huh?
---
Hey! Link!
---
Can you see that? Up there in that
tree...
---
You see that huge Toaru bee's nest?
---
I want it...bad...
---
You know what Toaru bees make
inside their nests, right? Of course
you do, you live here.
---
...You don't? Well, they collect nectar
from flowers and turn it into Rupees!
---
I don't have any spending money, so
I'm SO glad I found this!
---
Oh! But don't tell my wife...
---
Any money that I have, she takes...
---
She used to be nice a long time ago...
---
Seemed like as she got bigger,
so did her attitude. Ugh.
---
Life's rough, huh?

Link turns around and starts walking away, the man then picks up a rock and throws it at the beehive. The bees get irritated and starts chasing the man who jumps in the water. Link runs over to speak to him.

Man:
Stupid buzzers! Bzzz-OOOUUCCCHHH!!!
Those things'll sting you at the drop
of a dang HAT!
---
Yeah, well... Rocks just ain't doing it,
obviously... Oww! Dang bees!
---
Ah!
---
Link! What about that
little friend of yours?
---
You know who I mean! You use the
whistle...to call him...
Y-You know who I mean...
Skree! Skree!

Link walks up to another weed growing nearby, this one is a little different than the one used to call Epona. He picks a weed and uses it to call a falcon, he then sends the falcon away to knock down the beehive that falls to the ground and leaves behind five yellow rupees. Link picks up the rupees, then he exits this part of the village.
In the next area he meets a small boy named Colin.

Colin:
Hi, Link... So you're done
with work, huh...
---
Miss Ilia just passed through here with
Epona not long ago...
---
...Link? Are you going to
see Miss Ilia?
---
Yeah, me too... But those guys over
there...
---
So, uh, Link... Do you think
we could go together?
-Sure!- *
-Maybe later...-
---
...Really? Gee, thanks!
---
I know where Miss Ilia went...

Link runs over to talk to the boys that Colin is scared of, there's one small boy and one a bit bigger who is called Tarro.

Tarro:
Link, c'mon! Teach us
how to use a sword!
---
Ah! Colin!
---
This guy's always attached to Ilia
at the hip! He never plays with us!
---
You're just trying to go up and see
Ilia again, ain't you?

Smaller boy:
...Well, we ain't gonna let you!

Tarro:
That's so cheap, Colin! Asking
Link to try to get you
past us! You whimp!
---
If you were a man, you'd try to get
past us yourself!
---
It don't matter how much you beg
Link! You ain't getting by!
---
...Oh! Unless... Maybe if
Link...
---
If he teaches us how to use a sword,
maybe then we'll consider thinking
about possibly letting you by!
---
Right? You'll teach us how to use a
sword, right?
-Sure!- *
-Maybe later...-
---
Whoa! All right!

Tarro:
OK! This is so awesome. Why don't
you...start with the basics?
---
Yeah! Show us how to slice!
---
Uh... I think you slice with (B).
Is that right?

Link slices at a dummy nearby.

Tarro:
YESSS!!! Was... Was that it?
---
OK, next show us a vertical slice!
Umm... I think you use (L)-targeting
and press (B)
. I THINK...

Link performs the vertical slice.

Tarro:
OOPS!
---
Sorry! I wasn't looking just then...
---
I'll definitely watch this time, so
do it once more, OK?

Link again performs the vertical slice.

Tarro:
What? That's it? That's EASY!

A woman has showed up, possibly the boys' mother?

Woman:
Tarro! Quit talking so much!
---
You little boys need to hush up and
just watch Link!
---
Hey, Link, why don't you
show us that next one? You know...
---
First you (L)-target, then you tilt (T) (up)
and press (B). That's a thrust,
Link! Show me! Show me!

Smaller boy:
...Oh, sheesh. The stab...

Link stabs the dummy.

Woman:
Oh, Link! Just amazing!
---
Since you're at it. why don't you
show us that other move...
---
You know, that little twirly thing you
do! I love that! What do you call it?
A spin attack?

Smaller boy:
You hold (B) for a while and then let go, right?

Link ignores them and leaves the area. The next area he comes to is a forest where Colin is waiting for him.


--Forest--

Colin:
Link!!!
---
Thanks for back there...
---
Those guys are always getting in my
way...
---
What's so fun about swinging a stick
around anyway?
---
I hate...beat-'em-up games...
---
I tell you what, though! When I grow
up, I want to be just like you,
Link!
---
So, do you think maybe sometime you
could teach me how to ride a horse?
---
If you promise to teach me,
Link, I'll show you the
secret entrance to the spring.
---
OK? You have to promise!
---
OK, Link! Let's hurry up
and find Miss Ilia!

Link runs ahead, Colin then shows him a secret entrance.

Colin:
This way, Link, This way!

See here? If you crawl though here, <----- Actual ingame spelling mistake.
you can get to the spring.

...It's a secret to everybody! Don't tell!

It's a little narrow, but as long as you
press (A) to crawl in and then use (T)
to crawl through, you should be OK.

I'll go in first, so you follow me, OK,
Link?

Link crawls after Colin into the hole. He exits to a beautiful spring. Ilia, Colin and Epona is there.

Ilia:
Colin?!
---
Did you crawl through that little hole
again? ...You know you're not
supposed to do that, sweetie.

Ilia approaches Epona, but Epona snorts and shakes her head.

Ilia:
So you still prefer your master over
me, huh, Epona?
---
Don't worry about your horse,
Link.
---
Fortunately, it looks like the injury
isn't too serious. You two can go on
together.
---
But Link...
---
Can you at least promise me this?
---
No matter what happens on your
journey, don't try to do anything...
impossible. Please.
---
Just come back safely.

Link smiles and nods. Suddenly some moblins come storming in mounted on wild boars, they knock the three friends unconscious. Their leader then blows his horn and a portal to the Twilight Realm opens. When Link wakes up he's all alone, he runs out of the spring. Suddenly he finds himself standing in front of what seems to be a big thick darkness blocking his way. Suddenly, a hand reaches out and pulls him into the darkness and with that, the sequence ends.

So, what this reveals is who the mayor is, that Ilia is the mayor's daughter and also that Ilia seems to have some sort of control over Link, is there something going on between them perhaps? It also shows the weed whistles and later in the video, when Link gets the boomerang the description says that you'll use the R-button to lock on to targets with the boomerang instead of auto lock on which could get at bit annoying sometimes in WW.

Ok, here's some more dialogue from two other videos that I found. The first one shows Link running around Toaru village doing... stuff. The second one shows Link getting his sword. Especially the latter can be considered a major spoiler, so if you don't want to know ho Link gets his sword in Twilight Princess, don't read on.

#### indicates words that I found unreadable.
Words in parenthesis are words that I'm not really sure of. Feel free to see if you are more succesful in reading those parts than I've been.

Link is in Toaru Village, he's speaking to a chubby woman.

Chubby woman:
Link, what have you been
up to?

That's right! I heard!

You're going to the ceremony in
Hyrule, right? You're going to be our
representative!

I knew it! It takes a special sort to
be able to do something like that!

Why, take my loafing husband, for
instance. He's supposed to be out
working in the fields, but instead
he's off doing who-knows-what.

now trying to find him, but he's so

anywhere!

I ought to just dump that oaf and

The conversation ends. Link walks around and then approaches her again.

Chubby woman:
Isn't it about time you started
thinking about taking a bride?

I'd make a fine bride!

Why don't you tilt (C) (up) and take a
look around? There's no chance you'll
see a better potential wife than me!

Me, I'm the healthy, hardy sort...
The ideal wife for a hardworking man!

Later, Link enters a shop.

Shop keeper:
Well, if it isn't Link!
Done with work already?

In that case, have a drink of this!
A glass of it tastes exceptional after
a long day's work, trust me!

Getting milk in a bottle:
You got milk in a bottle!
...But this bottle's half-empty!
Set it to and use it with (Y)
or (X) to heal yourself!


Now for the second one; Link gets his sword:

Link is speaking to some sort of guard.

Guard:
Hey, Link, (Ilia) just (can't)
####### ### your ####
(She) (looked) ### (into) (no) (good)
---
Weren't you supposed to #######
##### today?
---
You didn't...get busted again, did you?
---
I'm right on the mark, aren't I?
You idiot, you got in trouble again.
---
Why am I not surprised? I'll ### you
though. I still just can't believe it.

The snot-nosed kid who I used to
always make cry is now going off to
Hyrule to be our representative.
Unbelievable.

Maybe our village representative

Link sneaks up behind the guard and takes the sword from his back.

Guard:
You crafty old dog... You did it.

Boy, I must be losing a step...
---
Tell you what, Link, I'll
lend that sword to you for a bit!
You're obviously man enough to wield
it now.
---
True blades are different from cheap
imitation swords: it's easier to draw
the blade with (B) than it is to sheath
it with (A).
---
I'll watch over you, so feel free to
use it for a while!

I've played parts of those. I believe they're from last year's E3, but they had it playable to the public at PAX. There was a section at the village, a section at the Forest Temple-like place, and a section on horseback.

Edit: I forgot to say what I thought of them, lol. The land based stuff was typical Zelda fare, which is good. The horseback stuff was pretty damn awesome. So as long as they craft a kickass world & story, this should be up to the usual Zelda standard (of ass-kickery)
