With SMB Utility, how can you change to places to where Mario goes inside a pipe and goes to another level? (Level to Bonus level & back.)
Also, are there any NES music editors out there?

No. NES music tends to be unique for each game (some games do use the same engines though). There isn't a universal NES music editor out there (nor will there ever likely be). Hell, I don't even think there is any for any particular game.

Which is surprising, really, it'd be nice to have a simple editor with a built-in NSF player so you could hear your changes without running it in an emulator...

It probably wouldn't be that hard to do, now that thinking about it. You probably wouldn't even need an NSF player built-in either, just have the user enter a command-line to an existing NSF player on their system, and have the utility generate an NSF, then launch it in the external player.
