My creative cooking consists mostly of "Now, how can I add cheese to this?"

A friend of mine once used shredded apple in some muffins he made and it was great, I often wonder how good that would work in other pastries.

I follow recipes but I'm not really a cook. Cooks can make recipes; cooks determine what goes well together. Just watch Iron Chef. They make up 5 entrees just from assorted ingredients. I follow what they've already done. Call me a conformist cause I love doing what everyone already likes.

I usually think of what tastes good and just how much I'd like to put into my food. I'm great at making marinades and cooking beef but I tend to make scary-looking desserts. I memorize most of my recipes. A favorites around my guests are beer-can chicken (beer poured on the chicken and stuffed into the chicken, then grilled to a golden crisp), crunchy salad (uses italian dressing and sesame oil with uncooked ramen noodles, almonds, and sunflower seeds) and jail-house pound cakes (a honey bun with crushed oreos).

Yeah, like baking. I can't bake anything like a cake or cookies without a recipe, it just fails every time. Stuff like that you really gotta know how much of each thing to put in or else, blah, you get terrible cookies, and nobody wants bad cookies. Other than that though, it doesn't seem like being a little (or even a lot) off will make too much of a difference. You just gotta remember that some spices are more volatile than others, like garlic, you can just pretty much put however much of that in a recipe as you like, and I like a lot of garlic.

Once I knew a recipe, I can then modify that recipe, or use techniques from that recipe for other stuff, but generally no, I can't just "wing it" with nothing to build from.

My friend who can do this thinks that I'm crazy or stupid or something because I will actually follow some recipes right down to the letter. But some recipes tend to definitely require more precision than others -- once I'm familiar with a recipe I know if I can just guess at amounts, or substitute ingredients, or not too.

I follow recipes when I am cooking.

There is a rare case when I just put things together but I just don't have the time or resources to do it often enough.

I forgot to mention one of the tried and true methods of cooking that was passed down to me by my cousin's husband. Before you open the cupboard (if you have one of those where all the food would be stored) open up a bottle of wine, take a drink, and then survey the different food you have. As your cooking, pour wine into what your cooking and just drink more whenever inspiration escapes you. It's amazing, you think that you might just get drunk and make some terribly greasy beast of a dinner but it usually turns out pretty good. You just gotta make sure you pick the right type of wine for what your cooking, red wine for beef, white wine for fish, either for chicken (but I preffer red).

Personally, I just throw shit together if it fits well with the other stuff when I want my own dinner. When I want to make something good for my family, I usually use the many cookbooks strewed around the kitchen cabinets

I'm pretty similar when it comes to cooking. I'll glance at a recipe if it's something I've never cooked before, but once I get an idea of what goes in and how it should be cooked, I can generally wing it pretty well. I've also got a knack for making up sauces and seasonings on the fly.

I did manage to ruin one sauce rather spectacularly, heh... I grabbed a bottle of white wine vinegar when I really wanted white wine. I realized my mistake pretty quickly, when the entire main floor of the house got filled with a strong vinegar smell. Yeah, that wasn't too appetizing.

I usually follow recipies. When I make food I want to eat ASAP. I don't want to risk ruining the meal and having to spend even more time making something else.

So I thought about this while shopping for food tonight at the store. I was with one of my friends and I was picking out different things for dinner, like sauce, meat, wine, vegetables, etc. The my friend asks me, how do you know what to get when making dinner. The only thing I could think to say to her was that I just pick up whatever I think will go well together, to which she asked how do you know what goes well together. All I can say to that is that I just know. I know that I get a lot of the inspiration for what to cook from what my mom used to cook me when I was at home, but when actually dealing with the amount to put into my concoctions, I just improvise and just put in what I think is right.

So, to everyone who cooks, do you follow recipes or do you just throw stuff together and hope it turns out well with pretty good success?

And incase anyone is interested, tonights meal was sausage meat pasta with red wine, vegetable and herb sauce.
