Does anybody know how did Fu make those DEMO WORLD THE LEGEND CONTINUES Letters change into 3 different colours, for the titlepage? Did he use some knid of weird pallette animation?

Not so much weird as easy to do. Just open the title screen level (I believe it's C7 or C5), and set up a palette animation. Just as a heads up, only the first 2 palette rows are used in 2bpp format (which is what the title screen uses).
