I know someone posted this a long time ago, but I was wondering if anyone documented the jump data for castlevania. I looked all over this board and tried to Google search it, but so far my efforts turned up absolutely nothing. So I'm wondering if anyone happens to have it on them at all.

Actually yes, I found and documented it! Here's what I saved:

How to make Simon jump higher in Castlevania:

At ROM location (with header) 0x19BA0 there are 10 bytes that control how much
Simon moves up for each split second, lowering the numbers will make him move more each
interval, but you have to make sure the last byte (0x19BAB) is 0xFF so he stops moving, and that
each byte from start to finish is larger in value than the next (or equal).

Example:
